Very tasty, soft almond pear cake is perfect for the festive table.
For a small round 16 cm. diameter cake you will need:
80 g. soft room temperature butter
3 eggs
100 gr. brown sugar
100 gr. of flour
60 g. almond flour
1 teaspoon of baking powder
A pinch of salt
Half a tablespoon of cinnamon
3 pears
For the Caramel Pear Sauce: (optional)
3 pears
30 g. almond slices or sticks
20 g. butter
1 tablespoon of cinnamon
2 tablespoons of brown sugar
We prepare the pears for the cake:
Peel the pears and cut them into slices. Pour 1 tablespoon of sugar into a bowl and roll the pear slices in it. We put them in an oven heated to 200 degrees and bake for 10 minutes until they are soft.
We are preparing the almond cake dough:
Beat the eggs together with butter and brown sugar until fluffy. We add sifted flour mixed with baking powder, almond flour, salt and cinnamon. We mix everything well until a homogeneous mass. Line the baking form with baking paper or grease it with butter. Place the oven-baked pear slices on the bottom, cover them with dough and bake in an oven heated to 190 degrees for 45 minutes.
We are preparing the caramel pear sauce:
We put butter, brown sugar, almond slices, thinly sliced shaved pears in the pan and gently heat them until they caramelize, sprinkle with cinnamon, pour the resulting sauce on the cake.
