"Silky" potato, carrot and cottage cheese dumplings

"Silky" potato, carrot and cottage cheese dumplings are very popular with our children, because they are soft, fluffy and very tasty.

For a small pot of cookies, enough for two child eaters:

3 medium potatoes

1 carrot

100 gr. cottage cheese

3 tablespoons of semolina

A pinch of salt

For the sauce:

1 tablespoon sour cream

1 tablespoon of butter

We are preparing the mass for silky potato, carrot and cottage cheese cakes:

We peel the potatoes and carrots, cut them into cubes, put them in a pot, fill them with water and boil them until they boil. Once boiled, drain and mash in a potato masher, cool. Add cottage cheese, semolina, sprinkle with salt. (If the mass is very sticky to your hands, you can add a little flour or potato starch) We didn't need it, because the potatoes were starchy enough.

From the prepared mass, we form small balls of the desired size. We put them in salted boiling water and boil them for about 2-3 minutes after they start rising to the surface.

We served it with sour cream-butter sauce. (We just melted butter in a pot, added sour cream and heated it until boiling.) Delicious!

PS Since the types of potatoes are very different - some are less starchy, others are more, we suggest to add 1-2 tablespoons of flour or potato starch as a precaution, if there is a suspicion that it may spread during cooking. (In our case, it was not necessary to do this, we used fast-cooking potatoes).
