We celebrated the first day of the new academic year very sweetly, a homemade cake with caramelized garden apples and cream and mascarpone cheese cream was on the festive table. This cake is really easy to make, so I invited my little assistants to help me prepare it.
26 cm. diameter cake biscuit, you will need:
150 gr. soft room temperature butter
5-6 tablespoons of brown sugar
4 large eggs
1 teaspoon of vanilla sugar
4 tablespoons of Spelled flour
4 tablespoons of potato starch
1 teaspoon of baking powder
A pinch of salt
For the mascarpone cheese cream:
Half of 1 tablespoon of gelatin
100 ml. whipping cream
500 gr. mascarpone cheese cream
5 tablespoons of sugar
2 teaspoons of vanilla sugar
20 ml. water
For the apple cream:
3 medium-sized apples
1-2 tablespoons of butter
4-5 tablespoons of brown sugar
1 teaspoon of cinnamon
2 tablespoons of maple syrup
A pinch of salt
For decoration:
Milk chocolate
Colored sprinkles
We are preparing the biscuit:
Beat soft butter at room temperature until fluffy together with brown and vanilla sugar, a pinch of salt. We beat in the eggs one by one, pour in the flour mixed with baking powder and starch, and mix everything until a nice homogeneous mass. Pour the resulting mass into a buttered baking dish and bake in an oven heated to 180 degrees for about 30 minutes.
While the biscuit is baking, we prepare the apple cream:
Melt the butter in a pan, add the peeled apples cut into cubes and cook for about 10 minutes, stirring constantly. Sprinkle with salt, add brown sugar and bake until the apples caramelize, add maple syrup and cinnamon, mix and place on a plate to cool.
We are preparing cream and mascarpone cheese cream:
We pour cold water over the gelatin and leave it to swell for 30 minutes. Whip the whipping cream with two tablespoons of sugar. In a separate container, mix the mascarpone cheese with the swollen gelatin, warmed in a hot water bath, simple and vanilla sugar, carefully mix the whipped cream into the resulting mass.
We are preparing the cake:
We divide the baked and already cooled biscuit into two parts. We take a sponge cake, which we place in the baking dish with folded edges, spread half of the whipped cream and mascarpone cheese cream evenly on it, put the apple cream on top, spread it evenly and finally add the whipped cream and mascarpone cheese cream, carefully place the second biscuit without pressing. We put the cake with the whole form in the refrigerator for the night.
