Very tasty herring snack with lightly caramelized onions and dried cranberries on toasted bread.
I recommend frying the bread for this snack in a heated, dry pan (without any additional fat). This tip only works if you have a non-stick pan. And if not, you can toast the bread in the oven or toaster.
For a not very large container, which will be enough for 1-2 diners, you will need:
- 2-3 strips of herring fillet
- 1 handful of dried cranberries
- 2-3 heads of onion
- 1-2 tablespoons of brown sugar
- Oil
- 2 slices of bread
- A little salt

First, we prepare the onions:
- Heat a little oil in a pan, add onions cut into half rings, sprinkle with salt, mix and fry until the onions soften and turn a little yellow.
- Pour brown sugar over the softened onions, stir and heat until the sugar dissolves and the onions caramelize easily.
- We put cooled caramelized onions, herring cut into bite-sized pieces, dry cranberries and greens on a plate.

- Cut the bread slices and fry them in a dry pan until nicely browned.
- Place the prepared herring on each slice of bread.
