Palmier French Cookies

French cookies "Palmier" with a simply fabulous taste, especially easy to make, with just three ingredients.

A cool team of food bloggers this week #With a Spoon Around the World we visited France, where the abundance and variety of dishes can very easily turn heads. I really wanted some particularly delicious French dessert. Unfortunately, I cannot boast of great pastry skills, various sweet baked goods are not my strong point, so I chose, in my opinion, the safest option. I baked French puff pastry cookies "Palmier". Some call them palm trees, others pig ears or butterflies. The name butterflies sounds the most beautiful to me, and adding one cookie next to another makes a really beautiful butterfly.

The cookies turned out to be particularly delicious, but I won't say exactly how many of them I managed to bake from such a quantity, because my little fingers kept looking for an opportunity to grab one cookie, but I got quite a lot - two large, full tins.

To make two tins of cookies you will need:

  • 1 package frozen yeast-free puff pastry (2 large sheets)
  • 100 ml. sugar
  • 1 teaspoon with a lot of ground cinnamon
  • Mix cinnamon and sugar in a bowl. We divide the sugar mixed with cinnamon into three parts.

  • Spread the first third of the sugar and cinnamon mixture evenly on the surface.
  • We put sheets of puff pastry on top.
  • Pour the second third of the sugar and cinnamon mixture, spreading it with your fingers, spreading it evenly over both sheets of dough.

  • We roll gently several times with a rolling pin along the entire length and width of the dough so that the sugar and cinnamon are pressed into the dough.
  • We roll starting from one edge along the long side and wrap to the middle and from the other edge to the middle.
  • We cut about every 1 cm.
  • We take a cut cookie, dip it in the remaining sugar and cinnamon mixture and place it far from each other on the baking sheet.

  • Bake in an oven heated to 180 degrees for about 10 minutes, turn over and bake for another 6 minutes.
