Cod with tomatoes

Very tasty oven-baked cod with tomatoes.

This dish does not contain meat, dairy products or eggs, so cod prepared in this way can be perfectly suited to St. Christmas table, as a hot dish.

To make a dish that is enough for 1-2 diners, you will need:

  • 2-3 strips of cod fillet
  • 1 tablespoon of olive oil
  • 1 tablespoon of tomato sauce
  • 2-3 cloves of garlic
  • Favorite spices to taste
  • 6-7 cherry tomatoes
  • Chopped leek

First, we prepare the sauce:

  • Mix olive oil and tomato sauce in a bowl, add your favorite spices, press in the garlic cloves and mix.

  • Cut the strips of cod fillet into pieces, put them in a baking dish and cover them with the prepared sauce.
  • Place cherry tomatoes cut in half on top, and sprinkle chopped leeks.
  • Bake in an oven heated to 180 degrees for about 20-25 minutes.

For the side dish, I chose "Home restaurant dishes" millet groats porridge with red lentils, tomatoes and basil. It took exactly as long to cook as it did to cook the cod. The preparation method is very easy - you just need to pour the prepared mixture into boiling salted water, stir and after covering the pot with a lid, cook on low heat for 15 minutes. We liked it, try it too 😉
