Just a fantastically delicious cake - a crumbly base, with a juicy filling of sweet-smelling deep blue blueberries and a fluffy layer of mascarpone cheese, which was eaten in an instant.
Basically:
1 large egg
200 gr. of flour
120 gr. butter
1 teaspoon of vanilla sugar
3 tablespoons of sugar
A pinch of salt
For the filling:
2-3 cups of blueberries
400 gr. mascarpone cheese
4 eggs
5 tablespoons of flour
5-6 tablespoons of sugar
1 teaspoon of vanilla sugar
1 teaspoon of baking powder
We prepare the dough base for the cake:
We cut the butter into cubes, put it in a bowl, add the flour, rub the butter together with the flour with a wooden spoon or simply by hand, add simple and vanilla sugar, salt, beat in the egg and rub everything until the mass remains smooth. We put the prepared dough in the refrigerator for a few minutes.
We are preparing the filling for the cake:
In a bowl, beat eggs together with plain and vanilla sugar, add mascarpone cheese and beat well. Add sifted flour mixed with baking powder and beat until smooth.
We heat the oven to a temperature of 180 degrees:
We take a baking form, which we lightly grease with butter or line with baking paper. Spread the prepared dough evenly on the bottom and sides of the baking dish.
Add the blueberries, pour the mascarpone cheese filling on top. Bake in a preheated oven for about 40-45 minutes.
