These pies are perfect for a family weekend lunch or dinner. From the specified amount, you can bake one large cake or 12 small cakes in cupcake tins. Small mashed potato pies with chicken are especially popular with children.
To make mashed potato pies with chicken, you will need (for 1 cupcake form or 12 cupcakes):
7-8 medium-sized potatoes
100 ml. milk
50 gr. butter
Salt to taste
For the filling you will need:
200 gr. boiled chicken fillet
1 small carrot
1 small onion
1 small tomato
50 gr. butter
100 gr. fermented cheese
Favorite spices, salt to taste.
First, you should prepare mashed potatoes.
Put cleanly shaved, washed, cubed potatoes in a pot, pour water, sprinkle with salt, and cook for about 15-20 minutes. or until cooked. After boiling, add butter, crush mashed potatoes, pour boiling milk, mix well. Leave to cool slightly.
Heat the oven to 180 degrees and line the cupcake molds with baking paper.
Place about 1 tablespoon of porridge in each compartment, forming wells, leaving space in the middle for the filling. Place in the oven and bake for about 20 minutes.
We are preparing the filling:
Melt the butter in a heated pan, add a cleanly washed, grated carrot, a peeled onion cut into small cubes, a diced tomato without the skin and a chopped chicken fillet, sprinkle with spices and stew for about 10 minutes. If necessary, add a little water.
After removing the mashed potato wells from the oven, we put about half a tablespoon of the filling into them. Sprinkle with grated cheese and bake in the oven for 15-20 minutes.
After baking, take it out of the oven and leave the mashed potato pies with chicken to cool in the molds before serving.
